Recipe Friday: Beef & Tater Bake

This is one of those comfort food dishes in our house. It tastes like hamburgers & tater tots in a casserole!

4 cups frozen hashbrowns
1 lb. ground beef
1 pkg. (16-oz) frozen chopped broccoli, thawed
1 can condensed cream of broccoli soup
1 can (2.8-oz) french fried onions, divided
1 cup (4 oz.) shredded colby-jack cheese
1/3 cup milk
1/4 tsp. garlic powder
1/8 tsp. pepper

1. Place tater tots in an ungreased 9×13 dish. Bake, uncovered, at 400 degrees for 10 minutes.

2. Meanwhile, brown beef in a large skillet. Drain.  Stir in broccoli, soup, 3/4 cup french fried onions, 1/2 cup cheese, milk, garlic powder, & pepper.  Heat through. Pour over tater tots.

3. Cover and bake 20 minutes. Uncover; sprinkle remaining onions & cheese. Bake 5-10 minutes until cheese is melted.

*Make ahead: Do step 1 and 2. Refrigerate. When ready to serve, do step 3 for an easy after-work meal.
**Make it a freezer meal: Do step 1 & 2. Cover top with plastic wrap, pressing down into the dish. Cover that with aluminum foil.  Freeze. When ready to serve, thaw and complete step 3.
