Freezer Meal Monday

When I was working outside the home, my friend Tiffany and I would have Freezer Meal day, but because of our schedules we weren’t able to do them as often as we would have liked. So when I came home, we decided to start doing “Freezer Meal Mondays.”  Today we tackled 2 breakfast items and 4 main dishes.

Here’s all of our ingredients before we got started:

Homemade Pop Tarts

Both of our families love pop tarts, so this was one I definitely wanted to try. I sort of followed a recipe online but I tweaked it a bit because my son only likes cinnamon brown sugar pop tarts, and I added a homemade glaze that I made up as I went.  It wasn’t hard at all, but it was time-consuming.  We’ll see if they are any good before I attempt this again.  If they are, I’ll double the recipe.  This one only yielded 10 pop tarts total.

Breakfast Burritos

Tiffany made breakfast burritos.  She made it basic so we could add what we wanted depending on our tastes.  This recipe called for 1 dozen eggs (beaten), 1 lb. sausage, and 2 cups cheddar cheese rolled up into 24 flour tortillas.  She flash-froze them and then bagged them.

Teriyaki Pork Chops

this one is Tiffany’s recipe and I don’t know anything about it except because she hates broccoli, I got the one with broccoli. 🙂

Sweet & Sour Chicken

The last time we did freezer meals, I made a Sweet & Sour chicken recipe, which Tiffany’s family really liked.  We didn’t think it was all that notable so I threw away the recipe.  This time I found another recipe only and hope it’s a good one!

Brown Sugar Pork Chops

In this Pork Chop recipe are 5 pork chops, 1/4 cup brown sugar, 1/8 tsp. ground red pepper, 1/2 tsp. garlic powder, 1/2 tsp. paprika, salt, & pepper.

Taco Chili Soup

This is an adaptation of Taco Soup that I’ve cooked before. The only difference is I added 1 cup black beans and I used homemade ranch dressing mix instead of store-bought.

Since we haven’t tasted these meals yet, we can’t vouch for them. 🙂  But it is a great way to make meals for our family while getting in that girl time that it all too elusive these days.
